We grow our oyster in Harris Creek where we have a 4 acre water column lease. We buy the babies (spat) at local Maryland hatcheries (Horn Point etc.). We do the Greenbelt farmers market and this year are going to shuck the oysters as well as serve them in the shell. We could go either way for this one depending on interest. Shucking would require us to get an additional health department permit.
