I was born and raised in Chicago. Back in 2007 I moved to Portland Oregon. I then worked for a catering company that specialized in local, made from scratch meals, cooked offsite, outdoors. I worked with them for about 10 years. During that time I also worked at their butcher shop. In that shop I learned about butchering, meat smoking, and charcuterie making. In 2020 my wife was offered a great nursing opportunity here at VCU and we’ve been loving it in Richmond since! So now I would like to take all my catering/butchering experience and mix it all with a Chicago classic sandwich, The “Italian Beef”. Homemade thin sliced roast beef, soaked in an Au Jus. The meat is placed wet in a French Roll topped with a Giardiniera that I also make. (A spicy Italian pickled relish) I would like to add a vegetarian sandwich and maybe a special sandwich too eventually.
