The Ailsa Craig Sweet onion is large and globular in shape. These onions have a papery peel, ranging in color from yellow to a deep gold. The thin skin surrounds a firm, crunchy, juicy, white layered flesh. Ailsa Craig onions are prized for their consistently sweet, and mild flavor when raw. The low values of pyruvic acid make these onions less sharp and abrasive in taste. Due to their high sugar and water content Ailsa Craig onions have a deep, sweet, warm flavor profile when cooked. Ailsa Craig onions are most prized as a true raw-eating, slicing onion due to their consistently sweet and mild flavor. Yet, Ailsa Craig onions can also be cooked utilizing their sweetness in a variety of methods for soups, slow roasting stews, braising meats, grilling fish and simply sauteing. Complimentary pairings include other alliums such as garlic and chives, apples, ginger, fennel and mint, foods rich in fat such as avocados, cheeses, cream and bacon, citrus, tropical fruits, herbs, legumes, chicken and chilies. Due to their high water content Ailsa Craig onions are not best suited for storage but will keep for about 2 weeks in a well ventilated, cool, dry, area.
