We produce premium, artisanal Shagbark Hickory Syrup, wild-harvested directly from our family farm in Dalton, Wisconsin.
Unlike traditional maple syrup, our syrup is crafted through a meticulous, small-batch process of foraging, cleaning, roasting and boiling the naturally shed bark of native Shagbark Hickory trees. This creates an incredibly distinct, smoky-sweet flavor profile with hints of toasted nuts—perfect for glazing meats, dressing roasted vegetables, or elevating breakfasts and cocktails.
Shagbark Hickory Syrup is one of the few syrups made from the bark of its tree. It is quite labor intensive which makes it quite rare - but definitely worth the unique woodsy taste, the “original” edition. Because we prioritize sustainability, our bark is hand-gathered without harming the trees, ensuring our woodland habitat remains healthy and productive.
In addition, unlike most syrups that use processed sugar as a sweetener, Golden Day Farms uses only pure, raw honey as a sweetener with no processed sugars.
Golden Day Farms has developed 5 unique flavor editions of the Shagbark Hickory Syrup:
1. Original Shagbark Hickory Syrup - natural woodsy taste and sweetened only with honey
2. Vanilla Shagbark Hickory Syrup - flavored with organic Madagascar Vanilla and sweetened only with honey.
3. Blueberry-Honey Shagbark Hickory Syrup - the flavor of the honey, that mixes delightfully with the shagbark hickory to give a lovely blend of blueberry taste, comes from where bees have pollinated in Blueberry patches
4. Raspberry-Honey Shagbark Hickory Syrup - the flavor of the honey, blends beautifully with the shagbark hickory to give a refreshing raspberry dimension, comes from where bees have pollinated in Raspberry fields
5. Cranberry-Honey Shagbark Hickory Syrup - the flavor of this edition of the Shagbark Hickory Syrup adds another unique dimension from honey where bees have pollinated in Cranberry bogs.
The distinctiveness and rarity of Shagbark Hickory Syrup, especially our one-of-a-kind premium editions and small-batch bottlings, cannot be overstated especially when compared to common maple syrup. In all of our demonstrations, tastings, and public interactions, the process and the product generate significant intrigue and will undoubtedly bring a unique, gourmet draw to the Wednesday night crowd at Farmers’ Market on Broadway.
Food Safety & Compliance:
While our farm is rooted in Dalton, we ensure the highest standards of food safety by processing and bottling our syrup in a fully licensed commercial kitchen (Chef Pam’s Kitchen). We hold a valid Wisconsin Seller's Permit and a Waukesha County Health Department permit (which will be kept on-site at our booth for inspection review).
