Our ducks are Pekin and Runners. Our eggs have been weighing in at 3 oz each. All eggs are collected, washed, candled, weighed, and refrigerated each day for freshness. Duck eggs are great for baking, which is why we sell our eggs by the 1/2 dozen. Most recipes do not call for more than 6 eggs. Duck eggs have a higher fat content in the yolk and a higher protein content in the whites compared to chicken eggs which make cakes fluffier and richer and ice cream creamier. Duck eggs are also great for gluten free baking because the higher protein in the whites binds the gluten free ingredients better and results in a better texture.
