A whopping 80 percent of Pacific halibut are harvested in Alaskan waters and flash-frozen while still on the boat. Halibut is a lean fish, with a taste that's slightly sweet and mild, somewhat like tilapia. It has a firmer texture than cod, but a gentle fishy taste.
