Half Moon Harvests

We are a small scale gourmet mushroom farm located in the Paseo Arts District in OKC. We are committed to providing safe, nutritious and delicious edible mushrooms to the residents of our community. We also hope to assist spurring interest in sustainable and ethical food practices.
We begin our process with both wild harvested and purchased fungal spores. We grow these spores out to mycelial colonies on agar plates. Sterility is of vital importance in this phase and that attention to cleanliness manifests in all areas of our production. Once we have enough mycelium we transfer it to sterilized grains for further growth. Once full colonization of grains has been achieved we do one more transfer to bulk substrate which is made mostly of straw, hardwood saw dust, soy hulls or wheat bran. The colonized blocks are then placed in our fruiting room where they produce the edible mushrooms bodies or “fruits”. Currently we are having great success with several oyster mushroom varieties including blue, pearl, pink, and king. We would also have lions mane for sale. Eventually, through the same process, we will have a steady supply of shiitake and chestnut mushrooms.
It is also our intention to sell grow kits so that individuals can produce their own fresh fruits in their home. The process for the grow kits is the same as our farming technique except the fully colonized bulk substrate will be placed in recyclable packaging and sold to customers.
We do our best to find both locally produced and organic materials for our production and have a goal of becoming certified organic as soon as we can find reliable and affordable sources.
Tyler Kirk and Morgan Silver
Morgan and I are both nurses in OKC and receive great satisfaction from serving others. A silver lining of 2020 was that we were afforded more time for introspection. Following the initial calamity and chaos of our new existence living during a pandemic, there was a stillness that allowed us to search ourselves for what would bring us the most joy. We found that joy in cultivating our own food, specifically gourmet mushrooms. It is our belief that the nutritional and medicinal benefits of mushrooms are underappreciated throughout this country. We hope to be a source of education and access to the incredible world of edible fungus.
