Maamoul (Egyptian Shortbread)

Maamoul is a Middle Eastern shortbread that's very different from the shortbread we're used to here in the States.

Olive and coconut oil replace the butter and only a dash of organic cane sugar is added to the dough. Maamoul cookies are moist and cakey. Stuffed with dates and flavored with a hint of rose water, these little cookies are a rather special treat that pair perfectly with a cup of hot tea.
