Lemon Honey Coriander Cornmeal Cake

A lighter version of your classic Southern poundcake. We use a combination of various flours plus fresh ground cornmeal to create a special cornmeal poundcake, as we call it. This flavor honors traditional spices and fruits used in the Middle East. Sweetened with honey and only just a dash of sugar, and a serving of healthy fat, thanks to our favorite--olive oil.
