Jorinji is a business owned by a couple: Earnest Migaki, who is a third generation Japanese American born and raised in Portland, Oregon, and Yuri Migaki, who is Japanese and moved to Portland in 2015.
Our business was founded in 1995 by Earnest and his first wife, Sumiko (who was also Japanese). 18 years after the business began, Sumiko suddenly passed away. Earnest survived alone for a couple years, and met Yuri in 2015; now Earnest and Yuri are running Jorinji together.
We make premium hand-crafted unpasteurized Miso. We also make koji, a key ingredient of miso, and some koji products like shio-koji and amazake, and some to-go items like Koji Pickles.
Our products are made LOCALLY--as are all of our from-scratch processes--done in Portland, including the fermentation processes--from 6 months to more than 5 years in our storage space.
We're proud that all of our products are completely hand-crafted using traditional methods that are unique and of high quality. So far, only two businesses including us are making hand-crafted miso and koji in Oregon (Another business is located in Southern Oregon)---and it's hard to find businesses like ours even across the nation.
