We produce a wide range of cheeses, including fresh, soft, semi-soft, and long-aged hard cheeses. Our goal is to create the perfect cheese for every taste and every dish.
We are part of the Temple–Wilton Community Farm, the first CSA (Community Supported Agriculture) farm in the country. All of our milk comes from our own organic, biodynamically managed herd. We believe it is important to keep the cows’ horns intact and to allow calves to stay with their mothers for several months.
During the summer, our cows are rotationally grazed on pasture. In the winter, they are fed hay grown and harvested on our farm.
For most of our cheeses, we use cheese cultures that we have developed ourselves.
