My name is Daryl Byrd and I am the proud owner and founder of Byrdie Bakes. After my wife was diagnosed with celiac disease, I switched from baking non-gluten free baked goods to gluten-free baked goods. I make celiac safe, gluten-free cookies in my licensed home kitchen. The cookies are made with a flour containing gluten-free wheat starch. While celiac safe, it is not for those with allergies or other sensitivities to wheat. I can make gluten-free wheat-free cookies upon request.
While the kitchen still technically has a minimal amount of gluten, it is safe for those with celiac disease. The cookies are made on separate equipment and prepared in spaces that are gluten-free. On top of that, I use and regularly change gloves, and wash my hands frequently throughout the baking and packaging process.
