About

Oso, meaning “bear” in Spanish, was the first nickname I was given in a professional kitchen — a name that stuck and shaped my sense of identity in the craft. It now represents my next chapter: the launch of Oso: Smoke & Dough, born from years of experience and a deep passion for woodfire, dough and smoke.
Osito, meaning “little bear,” carries that same spirit — it’s both a nod to Oso and the perfect name for our product: small, smoky handhelds made to be eaten like a taco.
Ositos are folded, woodfired sandwiches designed to carry bold BBQ flavors through a farmers market. The inspiration draws partly from small Italian street snacks and partly from panuozzo (folded sandwiches from Campania). But Ositos go further: proteins and sauce are baked into the dough itself, then finished with bright toppings for freshness. The result is its own category — smoky, folded handhelds made for speed, flavor, and fun.
