Vaquero Tacos isn't just a food truck—it's a journey back to the West Texas plains where this whole story began.

Growing up in the Panhandle, I spent my childhood watching cowboys work sunup to sundown. But the one who caught my attention most was the cowboy cook—Cookie. From the back of a dusty chuck wagon, he’d whip up meals that brought the whole crew together. Watching him cook under open skies lit a fire in me that never went out.

Fast forward twenty-some years, and that memory is what inspired me to start Vaquero Tacos. This isn’t fast food—it’s true Tex-Mex, made with the same pride and flavor that fed cowboys on the range. Every taco we serve is built on tradition, family, and bold West Texas taste.
