For the past year, Doug Hite has been hosting breakfast sandwich popups focusing on wholesome, nostalgic, nourishing, tasty buttermilk biscuits. Using local ingredients and keeping a concise and accessible menu, Hite's popup Biscuit Union wants to bring people together with good breakfast food.

Taking notes from his Appalachian upbringing and fine-dining culinary learnings, Doug Hite's mission is to spread joy with good food, building community, using local ingredients and eliminating waste in food production.
