Ginger Jump-Up Cookies (Ginger Molasses)

What makes these cookies so special? We use unrefined brown sugar from Mauritius (It's an island off the coast of Africa), molasses; a spice mix of ground cinnamon, ginger, and cloves; as well as juicy chunks of crystallized ginger, all of which are held together with fresh, organic, Michigan grown organic soft white wheat that we freshly mill in house on our New American stone mill. The freshly milled whole-grain flour lends the spicy, sweet cookie an appealing chewiness and an enticing complexity of flavor.
