Elk River Wagyu is a Veteran owned and operated small family farm located in Delrose, TN. The beautiful Elk River hugs the perimeter of the farm’s lower basin. The name Elk River Wagyu is also an homage to my father, Eddie Ray Sims, who purchased the farm in 1995. The farm consists of 250 acres, we rotationally graze more than 150 acres and produce hay on the remainder.
Our Black Wagyu herd is 100% pasture raised on natural forages grown on the farm, never confined they live a stress-free life. This stress-free life is evident in the amazing tenderness of Elk River Wagyu. We harvest at the optimal time to promote the distinctive marbling known to Wagyu and to provide the best possible product to our discerning customers. Wagyu is known to be higher in both Omega 3’s and 6’s than a similar size piece of salmon, and rotational grazing has been shown to increase Omega 3’s even further.
Our herd is registered with the American Wagyu Association and our genetics can be traced to original cattle in Japan. Our cattle are born and raised on our farm; we can attest to the origin of every animal. Our herd is also growth hormone and antibiotic free. We take great pride in good stewardship of our herd and land.
