My name is Mehmet Bilge, and together with my wife, we specialize in making daily hand-rolled phyllo baklava—the traditional Turkish Gaziantep style, considered by many to be the finest in the world. Operating as a certified home bakery in Ohio, we have been successfully selling our baklava at farmers markets including the Cuyahoga Valley Farmers Market, Miles Farmers Market, Purple Brown Farm Store and Oxbow Market as well as four others across the state.
Very few baklava producers in the U.S. match the precision and craftsmanship behind our daily hand-rolled Gaziantep-style baklava. I wanted to introduce you to our Turkish Antep-style baklava—a unique offering that’s rarely found in the U.S. To our knowledge, only two or three producers nationwide craft baklava in this traditional style, and we’re proud to be among them. Our baklava is handcrafted with such quality and authenticity that all of our customers say it's the best they've ever tasted in the U.S.—consistently described as “amazing” and “unforgettable.”

Bilge Baklava is rooted in the Antep tradition, reimagined for today’s health-conscious market. Our baklava is crafted with great care and tradition. We never use frozen phyllo or produce frozen baklava. Each sheet is hand-rolled fresh daily to preserve its crisp texture and authentic flavor. Our baklava is crafted with great care and tradition. The Gaziantep style is recognized by the European Commission as a Protected Designation of Origin, honoring its heritage and outstanding quality.
Each tray contains 35–40 ultra-thin sheets of phyllo dough, all hand-rolled and stretched daily—a process that takes around three hours. We use hand-rolled phyllo, premium pistachios, and clean ingredients—no preservatives, no shortcuts. Our mission is to preserve heritage while offering transparency and trust to every customer.
