A Taste of Spain in the Heart of Texas: The Iberian Pig
Nestled in the rolling hills of Clifton, Texas, our farm is dedicated to bringing the legendary Iberian pig—a symbol of Spain’s rich culinary heritage—to the Lone Star State. Our journey began two years ago when my partner and I set out to raise these extraordinary animals in a way that honors centuries-old Spanish traditions while embracing Texas’ natural bounty.

What makes our Iberian pigs special? Their unparalleled quality and flavor. Raised with the utmost care, they roam freely on open pastures, feeding on a natural diet of acorns, herbs, and forage—a practice that gives their meat its succulent texture and rich, nutty flavor. This traditional approach, combined with Texas' unique terroir, results in a truly exceptional product that blends the best of both worlds.

Now in our first full year of operation, we are proud to offer USDA-certified Iberian pork products—ensuring the highest standards of quality and sustainability. As we continue to grow, we are eager to join the vibrant community of Saint Michael’s Farmers Market, where we can share our passion, our story, and our one-of-a-kind Iberian pork with local food lovers.
