Our company specializes in the production of Polvorosas: Venezuelan traditional savory pies. We treasure the original recipe, Chicken Polvorosa, which has been passed from generation to generation and now we make it from scratch with local ingredients to share it with the community, but, What is a Chicken Polvorosa?
A Chicken Polvorosa is a traditional savory pie of Caracas gastronomy. This recipe shows the deep Hispanic influence in Caribbean gastronomy. The pie is characterized by its delicate and crumbly dough, inherited from the Spanish Polvorón, and by the exquisite contrast between sweet, salty and sour of its complex and tasty filling.
Polvorosa is a recipe that caraqueños treasure to prepare at festive moments to share with the family. It is usually prepared in a large refractory mold, we preferred to make them in individual molds to make it easier to enjoy and transport.
The classic recipe is the chicken one, however, we have allowed ourselves to experiment to achieve variations and new flavor combinations. Thus, we have the Beef Polvorosa and the Chickpeas and Spinach Polvorosa, the latter borrowing foreign tones led by curry and ginger.
We hope to add new flavors to the menu as we learn the preferences of the community, making use of the fresh ingredients that each season brings.
