Hi, I'm Nicole Bilbao, founder of Bilbao Basque Cheesecake. Born and raised in Lakeland, Florida, I've always had a passion for creating and bringing joy to others. Whether through art, beauty, or food, making people smile has always been at the heart of everything I do.
My career began in cosmetology, where I spent nearly 10 years helping people look and feel their best. After the birth of my son, I chose to stay home with him during his early years. That season of life led me to discover a new creative outlet—baking and cake decorating.
What started as a hobby quickly became my true passion. Over the next decade, I honed my skills working for a few local bakeries, perfecting my craft and learning the art of creating memorable desserts.
Eventually, I knew it was time to build something of my own. Inspired by my husband Javier's Basque heritage and the rich history behind the iconic Basque burnt cheesecake, I founded Bilbao Basque Cheesecake. My goal is simple: to share an authentic taste of Basque culture while creating desserts that bring people together and leave lasting memories.
This business is more than cheesecake—it's a celebration of family, culture, tradition, and the joy of sharing something truly special. I'm excited to continue this journey and grateful for everyone who has become a part of it.
