Star Thistle Blossom Honey

Our star thistle honey is produced in central Michigan. Originally planted to prevent erosion, this plant thrives in poor conditions such as sandy soil and drought. It has spread throughout Michigan, somewhat negatively, but is a prolific honey plant. The resulting honey is from untreated, unsprayed fields and has a light, mild, slightly zesty taste.
