Phoenix Oyster Mushroom

The Phoenix (Ostreatus pulmonarius) is the most commonly encountered Oyster Mushroom in the wilds of the Pacific Northwest. It tends to fruit in slightly warmer temperatures than the Pearl Oyster Mushroom (most commonly cultivated and eaten!), and forms smaller fruiting bodies with a mild anise flavour. Every bit as versatile and delicious as its cousin, Pearl.
