Tricholoma matsutake, AKA "Pine Mushroom/Matsutake," is another regional treasure most highly prized in Japanese and Korean cuisine. Because most of our local Matsutake are exported, many of us don't know what we're missing. These pungent, spicy mushrooms are best used to infuse a meal with their own exotic flavour and aroma, variously described as 'Pine Resin', 'the Smell of Autumn', 'Cinnamon' and 'Gym Sock!' Certainly not for the faint-hearted.... Only the highest quality (#1 'gift grade') specimens form part of our limited foraged product line - unopened caps with no visible damage retain the most intense aromatic and flavourful compounds for your culinary feats and dining pleasure!
