Description
Hypomyces lactifluorum, AKA "Lobster Mushroom," is one of the local treasures of our regional forests and part of our limited foraged product line. With a complex and bizarre life-cycle, mature specimens resemble cooked lobster, and have a distinctly 'oceanic' flavour that is certainly at least reminiscent of lobster meat. The firm 'meat' of this mushroom stands up very well to prolonged cooking times, making it an excellent meat substitute for bisques, soups and stews. Sautéed slices in butter... um, I have to go and eat some Lobster Mushrooms, please excuse me.
