Description
Pleurotus djamor, AKA "Pink Oyster Mushroom." The rosy, petal-like caps tend to lose their colour, when cooked, but retain a hearty, meaty texture and ham-like flavour and aroma. Tropical heating needed during cultivation, and relatively quick spoilage complicate the farm-to-table path for this mushroom, but we think you'll agree it's worth the effort. With little effort, this mushroom easilly simulates bacon strips and replaces ham in any recipe.
