Chestnut Mushroom

Pholiota adiposa, AKA "Chestnut Mushroom," is a delicious gourmet mushroom notable for its chestnut-coloured, silky-textured cap and crunchy stem which keep their size and structure very well during the cooking process. This makes them an excellent garnish mushroom, providing a nutty flavour, visual and textural variety. Glutinous compounds in the caps also serve as a thickening agent in soups and stews, in a similar fashion to their Pholiota cousins, Nameko mushrooms.
