Description
Flammulina filiformis, AKA "Enoki/Enokitake," is a delicious gourmet mushroom used widely in Asian, especially Japanese, cuisine. The mild seafood flavour and good structural integrity of this mushroom when cooked makes it a great addition to hot pots, soups, stir fries and nabemono, where it takes on a noodle-like texture. Because mushrooms are comprised mostly of a filling dietary fibre (chitin), replacing noodles with Enoki is a great way to reduce carb's and calories in a meal when catering for anyone with T2 Diabetes or on a calorie-controlled diet whilst maintaining portion size and bulk.
