Shaded Stream
Sweetness: Semi-sweet
Aroma & Flavor: Smells of barrel and graphite and nectar, mingled with vinous overtones of mature cider. Sharp on the palate initially and rounded by the wild blue elderberry. Fruity, woody, and smooth.
Notes: The Shaded Stream highlights the mission of the North Olympic Salmon Coalition, which works to maintain healthy salmon habitats in our region. We aimed to invoke the riparian flavor of a shaded creek. This cider aged on Western Red Cedar staves for two months, and was then infused with blue and black elderberries and elder flowers. Tree, flower, and fruit fermented together to celebrate healthy streams.

Field of Hay
Sweetness: Dry
Aroma & Flavor: Green apple and wine, chalk like minerality on the nose. The edgy and refreshing opening gives way to a balanced mid pallet lemon peel bitter. Herbaceous sweetness and grassy field notes carry through the lingering finish.
Notes: This cider is a complement to the farmer, the maker of hay bales, the stewards of the valley. In this particular cider the hay came from Center Valley grown and harvested by Keith Kisler. There is much history of using straw and hay as a “cloth” in the apple press (search rack and cloth press) to make cider. Harkening back to this methodology the cider was run through a very “fresh from the field” hay bale composed of a mixed assemblage of pasture species. The cider is crisp and refreshing and earthy and like walking through a field of fresh cut hay.

Friend of the Garden
Sweetness: Semi-sweet
Aroma & Flavor: Cider and earth aromas linger with the undertones of herbal licorice. Edges of wine and rooty depth, and a finish of herbal delight that touches oven-roasted root vegetables. Sweet Sicily pods, Valerian root and wild harvest fennel seed.
Notes: This special release cider celebrates one of our land partners here on our Chimacum farm, the Friends of the Trees—an alliance of farmers and activists who grow and propagate medicinal plants while also advocating for ecological agriculture and healthy natural systems.

Sun & Seed
Sweetness: Dry
Aroma & Flavor: Classic cider aromatics, earthy wine-like and slightly of yeast in the nose. Rustic apple with acid to hit the cheeks. Finish of toasted nut, outbreath of aromatic carrot, raw sunflower, and pithy apple tannins.
Notes: This infusion is a tribute to the harvest of seed to make more fruit and to our land partners, the Organic Seed Alliance (OSA), who is leading education, research and advocacy to advance organic seed. We toasted sunflower seeds from OSA on a sheet pan in the oven, allowing the dark seeds to bleed their color into the cider. Additionally OSA provided us with 70 lb of organic purple carrots that infused this vintage with a surprisingly bright blush of color. The sensations from the carrots are both bitter and sweet in the breath, while a light fermentation of the carrot pulp brought a balanced lactic acid sharpness. Crisp, earthy, nutty, gentle. We are quite delighted with the outcome.
