My father grew up in San Antonio, TX in a poor hispanic family. As a first generation hispanic female, my passion is to carry on my family legacy of food and culture. After taking our family to Wisconsin for work, my father and mother raised us in a dairy culture known throughout the world for the finest milk and cheese, a treat our family delighted in. Now as an adult working a career in higher education at Baylor University in Waco, I have noticed a near total absence of the very food item my family loved when I was a child: cheese curds. So, I started a company to bring this cultural food treasure to Texas. We use only the finest cheese curds obtained from Ellsworth Coop Creamery in Wisconsin, combine them with local flours, seasoning, and top quality milk, to provide an incredible taste and texture to our lightly deep fried cheese curds. To finish off the flavor, we also make a special classic lemonade with fresh squeezed lemons obtained locally. We make all the cheese curds by hand on site for our customers to watch in order that they can witness the craft, care, and excellence poured into every serving.
