Kombu

Here on the West Coast of California we are grateful to have several fresh varieties of kombu on our coastline. Laminaria Setchellii is the main species that we harvest along with smaller quantities of sweet kombu (laminaria farlowii).

Kombu can be dried in the sun or in the oven. The air temperature must be 90F and less than 60% humidity in order to have ideal conditions for sun drying. Kombu can be laid out on clotheslines to dry of dried on mesh netting. Constant airflow and heat are a mus
