My husband developed diverticulitis approximately 11 years ago and had to go gluten-free or face Colorectal surgery and possibly having to wear a colostomy bag for life. Gluten, corn, and broccoli are triggers for a flare for him. He has managed his diverticulitis by diet all this time. It was a hard road with many flares, but with the correct diet and some holistic supplements he has done it. That being said, I had to learn how to cook and bake gluten-free. I also went gluten-free myself. At the time he became ill 11 years ago, I was a litigation paralegal and did not have much time to devote to learning how to bake gluten-free. When Covid hit I had the time to experiment and work on my baking skills. By the end of 2020 my kitchen was totally gluten-free. I retired from the legal profession in 2021 and everyone was telling me that I needed to start selling my gluten-free baked good. In January 2022, I stepped all in & got by dba and all the things required for a cottage bakery. I then applied for a booth at our local Georgetown, Tx farmer’s market. That was easy for me to get in, since we were regular customers, and I had known the owners for years. I managed all of this on a shoe-string budget of $350. That included the purchase of a tent, table, sign, business cards and insurance gf ingredients. On February 6, 2022, I started at the farmer's market selling gf brown butter chocolate gf chunk cookies, gf bourbon chocolate chunk cookies, gf pecan pie bread pudding, gf/sugar free chocolate chip cookie and gf bacon oreo truffles. I now have a much more expanded menu that includes my gf bourbon pecan brownie, gf bourbon salted caramel, gf focaccia bread (roasted garlic & hatch chili) gf cinnamon rolls, (reg, blueberry & lemon), my signature gf banana pudding cupcakes and gf death by bourbon chocolate cake. I made and sold my 1st gf wedding cake last month. I am now known for working with people’s diet issues and can make almost all my gluten-free baked goods, dairy-free, nut free and vegan.
