The Curious Cat Bakery is a St. Pete-based bakery making the best croissants you’ve ever eaten — that just happen to be vegan.
I started the Curious Cat Bakery out of necessity. I fell in love with croissants in the streets of Paris, refused to settle for a life without them after I went vegan in 2011, and set out to make them completely egg and dairy free.
But making delicious pastries just for myself wasn’t enough. I’ve gone to too many coffee shops and found nothing as a vegan option on the menu.
My mission with Curious Cat Bakery is to make delicious vegan food available to everyone everywhere so no one feels like they have to sacrifice for their values, and to encourage non vegans to choose vegan food simply because it tastes good.
I currently wholesale at coffee shops all over the Tampa Bay area and Orlando and do markets (which sell out almost every time).
Customers have said my croissants are “better than the croissants in Paris” and cannot believe they’re vegan. ABC Action News called them a “tasty hit” and VegNews featured Curious Cat Bakery as one of the top 5 places for vegan croissants in the country.

That was her until she went vegan in 2011 after watching a documentary and vowing never to eat animal products again. One small problem: she loves food — especially baked goods — and this was a pre-Impossible Burger world.
So she set out to change that. She fell in love with croissants in the streets of Paris and wanted to make them completely egg and dairy free.
She's not a trained chef and yet as a vegan and pastry lover, she knew what she wanted to create and kept going until she cracked the code.
