Bistro Nota is small French inspired restaurant located on 620 S Calhoun Street serving dinners Wed-Sat from 5pm-9pm. We focus on quality, utilizing scratch made ingredients whenever possible, including making our own seasonings, dressings, sauces, breads, & desserts - all within the scope of comforting midwestern cuisine. We also operate a food truck, the Bistro Bus during the summer food truck season, this will be our second year doing so. The Bistro Bus serves unique sandwiches on artisan bread, from a chicken cordon bleu inspired sandwich, to a rich & decadent braised short rib sandwich, along with a roasted vegetable sandwich available for vegetarians. The Bistro Bus & Bistro Nota are manned by the two co-owners, Jake Koczergo & Cam Kaminski, along with a very small dedicated staff.

Jake & Cam have worked their way through a heavy majority of restaurant in Fort Wayne, both being born & raised here. First meeting at 800 Three Fires, they have worked with each other on and off at a variety of locations for a number of years before deciding to open up their own French inspired Bistro, Bistro Nota. While opening a restaurant on the cusp of 2019 hosted a litany of challenges, Bistro Nota has remained operational through several service model changes, in the past serving lunch, brunch, offering an online meal pickup service, a food truck, and now full dinner service. Regardless of whether it is served off of a paper boat, or our signature plates, the Bistro Nota experience is all about quality and honesty, and both of the owners are always willing to adapt to provide such.
