About

Pork & Greens is a woman-owned farm founded in July of 2020 in Castleton, NY. We were founded out of the desire to develop an efficient and accessible system for feeding pigs food waste, and a year-round, soil based production of greens. We pride ourselves on our ability to offer a variety of high quality products while streamlining our practices for soil health and animal welfare.

We steward the land with ecological practices while producing high-quality food, reducing food-waste, and building soil health. We raise around 40 pigs a year on 15 acres of woodlands. Pigs on our farm spend their time rooting, grazing, and lazing through our wooded spaces. We maintain their health through a well-rounded diet of repurposed food that would have previously been waste. Our ½ acre (and growing!) vegetable field supports our mission to use hand-scale, minimally invasive techniques in our greens production, ultimately helping us build the health of our soils.

Production Practices

At Pork & Greens, we produce a wide range of leafy vegetables through all seasons. We are proud to be able to bring nutrition and freshness to your plate with our year-round, soil-based greens. We focus our production on arugula, spinach, lettuce, kale, escarole, mustard mix, pac choy and assorted microgreens. Our specific selections are based on greens that can brave all conditions from winter to high summer here in the Hudson Valley, while maintaining flavor and nutrient density. We farm using low-tillage strategies that help us improve soil health.

We believe that good food comes from good farming with an emphasis on care. Our pigs are raised in the wooded spaces throughout the farm that keep them engaged and happy. Our pigs are a mix of breeds to ensure diversity in characteristics and genetics. We feed a diverse diet of spent brewers grain, whey, baked goods, vegetables and other goods. This makes for happy pigs and high-quality pork with depth of flavor. We are thankful to the local producers that help us reduce food-waste while providing a well-rounded (and delicious!) diet for our pigs.

At Pork & Greens we pride ourselves on giving our hogs ample space to roam between rotated woodland paddocks, providing opportunity for them to root, explore, fertilize the soil and encouraging their natural inclination to forage part of their diet. In addition to what tasty bugs and plants they may find in our paddocks, we also feed out a well-rounded diet of foods and byproducts which we are redirecting from waste streams. We are so happy to partner with fellow local producers to turn would-be compostables like spent brewer's grain and whey from cheesemaking into nutrient-dense feed, restoring those products to the food cycle. We also work with local food shops and food banks to divert damaged or just-out-of-date food items, primarily dairy and baked goods, from landfills. We gather these foods and unpackage them into our feed buckets, allowing us to separate out recyclables and vastly reducing landfill space while turning those cakes and donuts into pig desserts! We love reducing waste and raising happy hogs!
